Decides on the range and quality of beverages to be provided. Purchases or directs the purchasing of supplies and arranges for the preparation of accounts. Verifies that the quality of beverages and waiting service are as required and that kitchen and dining areas are kept clean in compliance with statutory requirements. Checks that supplies are properly used and accounted for to prevent wastage and loss and to keep within budget limits. Recruiting, training, supervising and appraising staff. Recruiting, training and motivating staff. Keeping up to date with licensing legislation and taking legal responsibility for the premises. Ensuring beer and wine are kept in good condition. Enforcing health and safety rules. Dealing with difficult customers. Ensuring compliance with health and safety legislation. Preparing promotional materials and displays.
